Crock pot café au lait with homemade vanilla syrup

Most of the time, I stick to plain old black coffee. I’m not one to order a fifteen-word drink, and I’ve never quite understood the pumpkin spice latte fad. But there are mornings like today, when snow is falling softly outside and the furnace has to be turned all the way up, that make me want something a little bit fancier to warm my belly.

Enter the crock pot café au lait. It’s quick and easy, and can be even quicker and easier if you mix the ingredients the night before. One batch makes about six servings, so this is the perfect recipe to put on a couple of hours before having company – especially since it fills the house with an amazing coffee/vanilla scent while it’s heating up!

Crock Pot Café au Lait

recipe adapted from Kitchen Treaty

  • 3 cups milk, preferably 2% or higher
  • 3 cups extra-strong brewed coffee
  • 1/2 cup homemade vanilla syrup (recipe below!)
  • whipped cream for topping

Combine milk, coffee, and syrup in a medium crock pot. Turn on high, and let the mixture heat up for 1.5 to 2 hours – check periodically to make sure it doesn’t start boiling, and take little test sips to see when it’s heated through. Spoon into mugs and serve topped with a generous blob of whipped cream. That’s it! Easy, right?

If you’re not drinking it all at once, this will keep for a couple of hours on the “keep warm” setting.

Vanilla Syrup

recipe adapted from Kitchen Treaty

  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup water
  • 1.5 tablespoons pure vanilla extract

Combine sugar and water in a saucepan, and place over medium heat, stirring often. Let it come to a rolling boil, then remove the pan from the burner (don’t let it boil for too long, or you’ll end up with hard candy!) Let sit for 45 minutes, then stir in the vanilla extract. Once cooled, store in the fridge in an airtight container for up to a week.

Makes approximately 1 cup (enough for two big batches of café au lait!)
